Buzzing Bran Muffins

Ingredients:

1 Cup boiling water
1 Cup wheat bran
¼ Cup dark honey
4 Tablespoons canola oil
1 Cup cranberries
1 ½ Cups whole- wheat flour
1 ½ teaspoons baking soda
½ teaspoon salt
½ Cup wheat germ
2 eggs, beaten
1Cup buttermilk

Directions:

Preheat oven to 350. Grease a 12- cup muffin pan. In a large bowl, mix boiling water, bran, honey, oil, and cranberries. Set aside for five minutes. Meanwhile, in another bowl, sift or whisk together flour, baking soda salt, and wheat germ. Beat eggs and buttermilk together in a third bowl. Stir flour mixture into bran mixture. Add buttermilk mixture.
Stir together lightly (do not beat). Fill muffin cups approximately 2/3 full. Bake 25 minutes, or until muffins spring back light when pressed with a fingertip. Let cool in pan for ten minutes, then remove muffins to a rack to cool.
