Fresh Salsa Dip

Ingredients:

3 avocados, diced
1/2 lemon, squeezed over avocados
1 bunch green onions, diced finely
1 small can super sweet white & yellow corn, drain
1-2 cans black beans, rinsed and drained
cilantro, chopped
tomatoes, diced
salt & pepper

Directions:

Combine ingredients. Vary amounts of ingredients to your taste. Serve with corn chips.

Hummus

Ingredients:

1-3/4 cups dried chickpeas (garbanzos)
1/4 cup fresh lemon juice
1 teaspoon baking soda
1/2 teaspoon ground cumin
1/2 cup sesame tahini
3-4 cloves garlic, mashed
1/4 cup cold water
1 tablespoon extra-virgin olive oil

Directions:

Soak the chickpeas for 8 hours with the baking soda in
cold water to cover. Bring the chickpeas to a boil over high heat, reduce heat, cover, and cook until soft, about 45 minutes. Drain, reserving a bit of the liquid.
Make the tahini sauce: Blend in a food processor or blender the tahini, cold water, lemon juice, cumin, and garlic. Measure out 1/2 cup of this sauce for the hummus, saving the rest.
Put the drained chickpeas in a food processor and process to a rough purée, adding a little of the cooking liquid if necessary. The mixture should not be totally smooth. Add the tahini sauce and process until just mixed. Scrape the mixture into a bowl. Stir in the olive oil.

Serve with pita bread, whole-grain crackers, or carrot sticks.

Fresh Salsa

4 lbs Roma Tomatoes
2 lbs Tomatillos
1 med. yellow onion
2 cloves fresh garlic
2 jalapenos peppers (remove seeds if you want a mild salsa)
1 bunch cilantro (cut half of the stems off)
1/2 of a lemon juice
1/2 of a lime juice
1 Tbls black pepper
1-2 Tbls salt

Directions:

Put all ingredients in a food processor, and pulse to desired consistency.

Peanut Butter-Honey Dip

My children love this! Konnor requested it for a class treat at school and it was a big hit. I have also taken it to a YW activity and came home with a very empty bowl.

Ingredients

1/3 cup smooth or chunky peanut butter, I use smooth
2 tbsp milk
2 tbsp honey
1 tbsp apple juice or water, I use juice
1/8 tsp ground cinnamon

Directions

Place peanut butter in small bowl; gradually stir in milk and honey until blended. Stir in apple juice and cinnamon until mixture is smooth. Serve with any fruit you like. We use apples and bananas. The recipe suggests cantaloupe, honeydew, peaches, and nectarines.
