Ingredients:
4 eggs
2 cups sugar
1 cup vegetable oil
2 tsp. coconut flavoring
3 cups flour
½ tsp. baking soda
½ tsp. baking powder
½ tsp. salt
1 cup buttermilk
1 cup coconut
1 cup walnuts, chopped
Glaze
1 cup sugar
2 T. butter, melted
½ cup warm water
1 tsp. coconut flavoring
Directions:
Beat eggs. Add sugar, oil, and coconut flavoring. Sift together flour, baking soda, baking powder, and salt. Add flour mixture to egg mixture alternating with buttermilk. Fold in coconut and nuts. Grease and flour pan or pans (Bundt or bread pans). Bake at 325 for about 45-60 minutes in a Bundt pan, about 40 minutes in 4 medium bread pans, or about 35 minutes in 5 small bread pans. While the bread is baking mix together the sugar, butter, water, and coconut flavoring to make the glaze. Take out of oven and poke holes in bread with a toothpick. Pour glaze over the top while still in pan and let stand at least 4 hours before serving.
