Baked Potato Soup

Ingredients:

1/4 cup butter
1/4 cup chopped onion
1/4 cup flour
2 cans chicken broth
1 quart whipping cream/ half and half
2 large or 3 medium baked potatoes
1 clove garlic minced
Salt and pepper to taste
4 bacon strips cooked and crumbled
1/2 cup grated cheese
3 T sliced green onions
sour cream

Directions:

Melt butter in saucepan over medium heat. Add onion, cook stirring occasionally for 1-2 minutes until tender. Gradually stir in broth. Add potatoes and cook over medium heat until it comes to a boil. Boil for 20 min. or until potatoes are tender. Mix flour with Cream and add to potatoes. season with salt and pepper. Cook until thickened. Top each serving with bacon, cheese and green onions. Serves 4.
