MEXICAN MANICOTTI

Ingredients:

1 Lb ground beef
1 can (16-oz) refried beans
1 Jar (16-oz) picante sauce
2 cups (16-oz) sour cream
1/4 cup sliced green onions
1 package manicotti shells
2 1/2 tsp. chili powder
1 1/2 tsp. dried oregano
2 1/2 cups water
1 cup (4-oz) shredded mexican style cheese
Olives

Directions:

In a bowl combine the uncooked beef, refried beans, chili powder and Oregano. Mix together and spoon into uncooked manicotti shells. Arrange in a greased 9x13 pan. Combine the water and picante sauce; pour over the shells. Cover with foil and bake @ 350 for 1 hour. Uncover; spoon sour cream over the top. Sprinkle with cheese, onions & olives. Bake 5-10 mins longer or until the cheese is melted.

This recipe can be made ahead and stored in the refrigerator. If refrigerated over night remove 30 min before baking.

This is one of my kids favorite dinners. Not everyone likes all the toppings so I melt the cheese on top and then place the other toppings on the table. I serve it with mexican style rice ,tortilla chips & salsa.
